Texas Pecan Pie

Topping Ingredients:

3 eggs

1/4 c. sugar

1 c light corn syrup

1 tsp vanilla extract

 

Whisk topping ingredients together until well combined.  Set aside.

 

Pie Ingredients:

1 package of cream cheese

1/3 c sugar

1/4 tsp salt

1 tsp vanilla extract

1 egg

1 1/4 c chopped pecans

1 un-baked deep dish pie shell (9 inch)

In medium bowl using a hand mixer, mix cream cheese, sugar, salt, vanilla and egg until smooth.  Place chopped pecans into unbaked pie shell.  Pour mixed topping over pecans.  Bake for 45 minutes.  Allow to cool completely before serving.

Pre-heat oven to 350.  When cooking 2, takes about an hour.  One pie takes about 45 minutes.
